quot Bread Of The Gods quot As autumn gives way to winter few things bring as much joy to ones heart as fighting off the cold by biting into a slice of soft warm bread This year Cavatappo Grill celebrates both this comforting ritual and owner Luca Marcatos Italian heritage with fresh-baked focaccia Crafted according to a secret recipe passed down from Marcatos great-great-grandfather and honed by Marcatos brother Andrea who works as a master baker in Italy the Cavatappo focaccia comes in three varieties with black olives cherry tomatoes or in its most basic incarnation simply adorned with herbs and spices To make the focaccia served at Cavatappo flour salt water and fresh yeast are mixed into dough which is then shaped into grapefruit-sized balls and allowed to rise After a couple of hours the dough is stretched to fill a rectangular pan and indented with the bakers fingertips to prevent bubbles from forming during baking Olive oil herbs and any accoutrements such as tomatoes or olives are added and the loaf is baked until crispy on top yet moist inside In its simplest form focaccia dates back several thousand years to the civilizations of the ancient Mediterranean While believed to have originated with the Greeks or Etruscans its name and modern form are derived from the Romans of antiquity In ancient Rome focaccia bread was known as panis focacius or fireplace bread in those days the bread was cooked in the ashes of the hearth instead of on a pan or tray Early focaccia breads were much more simple than modern forms usually consisting of little more than flour water and salt Yeast was rarely used as the warm humid climate of the Mediterranean allowed the flat bread to rise on its own however many modern recipes call for small portions of yeast to expedite the rising In the two thousand years since its creation focaccia has come to exist in a wide variety of sweet and savory forms from cheese- or meat-topped versions to ones bedecked with sugar or orange peel It can also be used as a form of pizza dough or for sandwiches But no matter how you prefer it focaccias delicious taste and ease of production make it a treat hard to pass up by Will Sabel Courtney

Fitch cuts Portugal credit rating

PARIS  - Fitch ratings agency said Thursday it was cutting its rating on bailed-out Portugal by one notch to 'BB+' because of its high level of debt and weak economic outlook.
 
Fitch said the rating has a negative outlook, meaning it could be lowered again, citing Portugal's "large fiscal imbalances, high indebtedness across all sectors and adverse macroeconomic outlook" for the downgrade.
 
Fitch said Portugal -- bailed out by the European Union and International Monetary Fund to the tune of 78 billion euros -- would see its economy shrink 3.0 percent next year, making government efforts to stabilize the public finances even more difficult.
 
It said the government's commitment to the reforms laid down in the bailout program was strong and it should meet this year's public deficit target of 5.9 percent of Gross Domestic Product (GDP).
 
The new conservative government elected in June drew up the 2012 budget which "contains significant expenditure reductions, mainly on pensions and civil service pay.”
 
"The budget is well-designed and is based on reasonable GDP assumptions.
 
Fitch therefore “expects the 4.5 percent deficit target for 2012 to be met," it said, while warning of large risks of slippage.
 
It said it expected total accumulated government debt to increase from 93.3 percent of GDP at end-2010 to around 110 percent at end-2011 and peak at around 116 percent at end-2013.
 
"The sovereign crisis poses significant risks to the banking system, which lends to one of the most indebted private sectors in Europe," Fitch said, warning that the banks will need fresh help from the European Central Bank.
 
Portugal was bailed out after fellow eurozone strugglers, Greece and Ireland, needed rescues in 2010 to save them from default, with the debt crisis since spreading steadily to snare Italy and Spain. — Agence France Presse
